Summer Gazpacho Soup

Gazpacho Soup

I love this soup in the summer! It’s hydrating, easy to put together, and really high in antioxidants like beta carotene and lycopene, both of which keep skin healthy and glowing. Eating garlic and onions are great for healing acne because they boost your immune system and have antibacterial effects. 

Here’s what you’ll need:

3 small cucumbers or 3⁄4 large one, chopped
4-5 chopped vine tomatoes
1 chopped red bell pepper
1⁄2 chopped large white onion, or 1 small one
3-4 chopped garlic cloves
Splash of red wine or sherry vinegar
3⁄4 cup extra virgin olive oil
Salt and pepper


Combine all ingredients in a blender except for the sherry vinegar. Blend until chunky or smooth (your preference), pour into a large bowl and add a splash of vinegar and stir. Add any more salt or pepper to taste. Serve cool and enjoy. Store in the fridge for up to 5 days.
